This week's food newbie? Twice baked sweet potatoes...
Bake the sweet potatoes (duh)
While it's baking, caramelize a little chopped onion.
Add in some whole kernel corn and chopped spinach.
In a separate bowl, mix it with the scooped out potato.
In a separate bowl, mix it with the scooped out potato.
Add the mixture back to your potato skin or a separate baking dish.
Top with cheese (recipe said havarti - I had mozzarella).
Bake until the cheese is melted and a little brown.
Nom. Nom.
I played with paints and markers.
Walked through the weeds tall grass with Sophie.
Yes, I did sew - some.
