simply delicious spicy pasta

My sister, Anne, made this spicy pasta dish when I last visited.  In all honesty, I laughed and thought, "Okay...not exactly sure how this combo will turn out, but I'm game for anything."  

I loved it.  Loved it for the taste, the spiciness, the creamy, cheesy comforting pasta, and especially for the fact that I can keep the ingredients in the pantry for a quick, easy meal.

Simply Delicious Spicy Pasta

You'll need:


Rotini or Bowtie Pasta
1 can of Rotel Tomatoes
1 jar of Alfredo Sauce
Shredded Mozzarella or Mixed Cheese

I adore the spicy Rotel and you can really turn up the heat by using the original rather than mild.
If you want even less heat, simply substitute diced tomatoes for less Rotel according to your taste.


When we made this the first time we didn't go light on the alfredo sauce and it was a little more creamy.  When I made it the second time, I tried to go semi-healthy and went with lite.  I thought it worked just fine.


How to...

Prepare the pasta according to package directions.
While the pasta is cooking...
Combine the entire jar of Alfredo sauce and Rotel tomatoes into a small saucepan.
Add a generous handful of the shredded cheese and heat through.

Drain the pasta and add to the sauce.
Yep, that's it!

Serve with a healthy salad and yummy glass of wine.
Your friends will swear you're a secretly trained Le Cordon Bleu chef.  Shhhhhh.

Add diced, grilled chicken and/or veggies to the mix.
